Delicious Corn Fritter & Shrimp Salad

It’s not often that you go to a restaurant and order an amazing Corn Fritter dish. Corn fritters are so simple to make yet so easy to disappoint. So, I decided to come up with an amazing recipe that would send anyones drama out the door! 😉

Fritters is a word that some people might get intimidated by, but it’s just really a batter that is fried, similar to pancakes. It is probably one of the easiest go-to appetizers to make when you have last minute guests coming over. If you have eggs, flour and corn, you are set! Just be careful you don’t have a pile of mush on your plate, fritters need to be moist inside and crispy on the outside. You can dress them up or just serve them with a dipping sauce. Either way, they are still tasteful.

I decided to bring some life to these corn fritters. I wanted them to be more than just an appetizer so I dressed them up with this delicious shrimp salad. We actually had this dish for dinner and it was really filling.  This is perfect for any occasion if you want something different to serve your guests!

Delicious Corn Fritter & Shrimp Salad

1/2 Cup All Purpose Flour
1/4 Cup Cornmeal
1/2 Tsp Baking Powder
1 Tsp Kosher Salt
1 1/2 Tsp Old Bay Seasoning
2 Eggs, scrambled
1 Tbsp Maple Syrup
2 Cups Fresh Corn Kernals
1/2 Cup Red Bell Peppers, diced
2 Scallions, green parts only, chopped
1 Tbsp Fresh Cilantro, chopped
1/4 Cup Canola Oil

1. In a large mixing bowl, combine the flour, cornmeal, baking powder, salt and Old Bay Seasoning.
2. In a separate bowl, combine the eggs and maple syrup.
3. Combine the dry ingredients into the wet ingredients then add in the corn, peppers, scallions and cilantro.
4. Mix the batter and place aside.
5. In a medium frying pan, heat ¼ cup of oil over medium heat.
6. Drop 1 tbsp of batter into the oil one at a time to fry. Flatten the batter a bit and fry for 1 minute on each side until golden.
7. Place the fritters on a plate and top with the Shrimp Salad.
8. Serve.

Herb Shrimp Salad

1 Tbsp Olive Oil
1 lb Frozen Shrimp, defrosted  & patted dry
1 Garlic Clove, minced
½ Tsp Kosher Salt
1 Tsp Old Bay Seasoning
Juice of 2 Limes, separated
Zest of 1/2 Lime, or 1 1/2 Tsp
2 Tbsp Olive Oil
2 Scallions, chopped
1 Tbsp Fresh Cilantro, chopped
1/4 Red Onion, sliced
1 Cup Cherry Tomatoes, halved

1. Heat 1 Tbsp of oil in a sauté pan over medium heat.  Add the shrimp, salt, garlic and old bay and sauté for 2 minutes.
2. Add the juice of 1 lime and sauté an additional minute until the shrimp is cooked through.
3. Remove from heat and allow to cool.
4. Once cooled, place the shrimp along with its juices in a bowl, add another juice of 1 lime, lime zest, olive oil, scallions, cilantro, and a pinch of salt and toss.
5. Add the cherry tomatoes and the sliced red onions and combine.
6. Serve.

  1. I love the use of fresh corn in these fritters – the only way to go. Will definitely be making these in a few months when fresh shrimp are abundant here on the East Coast. Thanks for sharing such a great recipe!
