Any Herb Pesto
I have to say that I am a true believer in not wasting food. You spend so much money on groceries and the last thing you want to do is throw away food that has gone bad because you just never got around to it. If you have leftover chicken, make some chicken quesadillas, if you have leftover veggies, make a stir-fry, and if you have fresh herbs going bad, make a pesto!
Salsa Verde My Way
So your regular Salsa Verde usually has tomatillos in them, which gives it the “verde” along with the jalapeños. But it also cools down the heat. So I decided to leave the tomatillos out of the equation and just make it all about the jalapeños. This recipe is ideal on any mexican dish, especially tacos 🙂 The smokey taste from the charred jalapeños and onions enhance the flavor of the salsa and give it a nice kick! Continue reading
